Do You Need A Perfect Summer 4th of July Recipe?

I actually found this one in a Reader’s Digest many years ago. I’ve been making it for years, and it tends to be a fan favorite. It is best if you can serve it in a big transparent serving bowl or dish, but if that is inconvenient, you can put it in something more portable too.

I also love this recipe because it is easy, inexpensive, and not that caloric. When I can save time, money, and calories, I tend to remember it!

You Need:

  • Whipped Topping – I usually buy a container of Kool Whip.
  • Packages of Red and Blue (Blueberry) Jello.
  • Pound Cake (Sarah Lee frozen pound cake works great)

Why don’t I tell you how much? Well, you can adjust the recipe to whatever size you need. And honestly, I sort of play it by ear and no longer remember what size packages to buy.

Prepare the jello according to package direction. You will want to be able to section it into little squares or rectangles when you are done. I usually make it in a flat cake pan or something like that. If you want it to be firmer, you can follow the Jello Jiggler directions, which means adding less water.

Thaw the pound cake.

When the Jello is firm, cut it into squares or rectangles. I usually cut mine about 2 by 3 inches. Dump them in your serving dish. Then cut up the pound cake into similar sized sections. Add those to your serving  dish.

The final step is just to mix in your whipped topping. You will have a nice red, white, and blue dessert that everybody likes.  It looks really pretty in a glass bowl, but people can get the idea by just seeing it from the top. It really seems to please everybody in my family, from kids to elderly people. I guess you could make it for any meal, and you could use different flavors and colors of jello.

It is also a fairly light dessert, and you can use sugar free jello and whipped topping if you’d like to cut calories.
