Vegetarian Grillers!

I guess you can use these ideas whenever you want to, but since I tend to associate the 4thof July with barbecue, I thought this would be a good time to point out that a barbecue can be great without roasted animal flesh. Of course, you could always grill those vegetarian hot dogs or soy burgers, and they are pretty good. But this would be a short article if that was all I had to write.

Tofu Shish-k-bobs – You can cut up a lot of vegetables that are great when roasted over a flame. Sweet potatoes, carrots onions, green peppers, and corn are favorites around here. Then carefully cut up the firmest tofu you can find, so you can insert a couple of cubes on your stick.

You can marinate the tofu first. A mix of olive oil, cilantro, and lime is good. So is barbecue sauce.

If the tofu does not work for you, just use a starchier vegetable like sweet potatoes as the main dish.

Grilled Eggplant – This hardy and versatile vegetable can make a main dish! Simply cut your eggplant into slices, and then brush it with a mixture of vinegar, olive oil, garlic, salt, and pepper. Put the slices on your hot grill and let them cook about 20 minutes, flipping once in the middle.

Grilled Mushrooms- If you slice those large portabella mushrooms about an inch thick, and grill them, they will have a texture that is similar to meat. They are becoming popular burger substitutes or sandwich fillers. They do not provide a lot of protein though, so if dairy is OK, you may want to top it with a slice of low fat cheese.

Grilled Corn – You can remove the cob from the husk, wash off the fibers, brush on margarine, olive oil, or butter, sprinkle it with salt and paper,  and then return it to the husk.  I suggest getting the husk damp before you grill it. If you do not have a husk, you can use foil.

It should cook on the hot grill about 20 minutes with the lid closed. You can test a cob to see if a couple of kernals are soft.

  • You mentioned grilled sweet potato. That is a favorite with me. It is so simple too. I just make 1 inch round slices, put them on a skewer so they don’t fall through the grates, and let them cook until they are soft. I can eat them plain, but some people like to add a little oil, margarine, or butter.

  • You forgot grilled bananas – yes, bananas. You brush them with melted butter (non-dairy margarine if vegan), a little lemon juice, and honey – then grill for about 5 minutes.

    At one BBQ they had grilled bananas in foil with pieces of Mars Bar. The choc and caramel melted over the banana. Maybe it’s not that healthy but certainly delicious and a rare treat once in a while.

  • Here’s another one – It’s not grilled – but is a good vegetarian 4th of July (or anytime) dish. Simply make a Mexican layer dip. I always layer refried beans on the bottom, then a thin layer of salsa, guacamole, etc. working my way up.

    Then on the top I smooth a thin layer of sour cream. Top that with shredded white quesodilla cheese and diced tomato. That’s the read and white. What’s Blue? Blue corn chips of course.
