I guess it must be obvious that I’m starting my New Year’s resolution diet. My latest post was about how low carb diets work, and today I’m posting a low carb recipe. And yes, I am deep into a ketosis induction headache now, so forgive me if I make any errors!
Anyway, I have lost weight on low carb diets before (Protein Power, which is slower, but not as restrictive as Atkins and still works), and am trying to crawl back on the wagon. I do not believe that there is one right diet for everybody, but low carb works for me. I lose food cravings after a couple of days, begin to lose weight, and have energy and enthusiasm after my body adjusts. Those first couple of days can be tough though.
Low Carb Tortilla Recipe
I miss crunchy stuff when I do a low carb diet, and these are really easy. Of course, like almost everything else I cook, I cheat when I make these.
- Start with ready made low carb tortillas (Mission Carb Balance is one I buy at my local grocery store). OK, I cheat. I cheat. But these are low carb, have high fiber (always important to our diets), and taste pretty good!
